“The Egg & I” Restaurant Chain Opens New Location in CO
Centennial, CO-based The Egg & I restaurant chain has now opened another Colorado location in Castle Rock.
According to a press release on RestaurantNews.com, the Castle Rock location opened Oct. 27 at 2240 Mercantile Ave. Unit 100, which is directly west of Castle Rock Adventist Hospital in the Meadows. The Castle Rock location marks the 26th location in Colorado, and the 107th location nationwide.
The restaurant chain is locally owned and operated by Cal and Teresa Weatherly, the release said. The Egg & I is known for its comfortable and friendly atmosphere and huge selection of breakfast and lunch menu items including benedicts, omelets and creative sandwiches.
“We are all very excited about this event to support the Children’s Diabetes Foundation and the opening of our first The Egg & I Restaurant in Castle Rock. The community has already welcomed us with open arms and we can’t wait to become more involved in our new community and to make new friends,” said Teresa Miller, General Manager of the world’s newest The Egg & I Restaurant. “We are also very pleased our restaurant is creating 25 new jobs in Castle Rock.”
The restaurant is open from 6 a.m. to 2 p.m. Monday through Friday and from 7 a.m. to 2:30 p.m. Saturdays and Sundays.
